There are many oceanfront places on West Maui where families may choose to picnic, starting with the one just outside of our Kaanapali Beach resort. The 3-mile long beach is within walking distance of our oceanfront suites’ fully equipped kitchens, gas barbecues and poolside cabana with kitchen. Consequently, preparing the perfect, oceanfront feast and finding the best location to enjoy it is going to be a breeze. We‘ve even got a few beach eats for you:
Grilled Vegetable Gazpacho
Why not visit one of the island‘s farmers’ markets and use some of the fresh goodies you find there to make grilled vegetable gazpacho? Simply wash, cut and thread the veggies on to a skewer. Next, put them onto our gas barbecue grills. When they are finished grilling, set them aside and grab a blender.
Fill the blender with a ½ cup of pineapple juice, two tablespoons of red wine vinegar, two cups of tomato juice and the fresh, Hawaiian seasonings of your choice. Next, toss in the grilled veggies, put the lid on the blender and hit puree. Once the mixture is pureed, chill it inside of your oceanfront suite‘s refrigerator until your family is ready to hit the beach. Serve it first while the veggies are still nice and cold. Yum!
Pineapple Rice Salad with Shrimp and Spinach
For another great treat, make up enough rice to feed your family and set is aside. Next, fill a bowl with ¼ cup of fresh pineapple juice, ½ cup of extra-virgin olive oil, three cups of fresh spinach, two tablespoons of chopped macadamia nuts and some thinly sliced radishes. Mix it around and then pour it over top of the rice.
Toss the rice around until it is completely coated with the pineapple juice and oil mixture before putting the bowl into the fridge. You might want to throw in some fresh chunks of pineapple too, but that’s optional. When picnic time is near, grab some peeled shrimp and put them on to the grill. Baste them periodically with pineapple juice and butter. Afterward, add them to the chilled rice mixture and serve it while everyone gazes out at the beautiful ocean.
